3 tbsp. butter
1/3 cup finely diced shallots
1 lb. button mushrooms, trimmed
1 tsp. chopped fresh thyme, or 1/4 tsp dried
1/4 tsp. salt
1/4 tsp pepper
1/8 tsp. cayenne pepper
1/2 cup riesling wine
1. In large skillet, heat butter over medium heat, cook shallots for 3 minutes.
2. Stir in mushrooms, thyme, salt, pepper and cayenne pepper, cook until browned, about 5 minutes.
3. Pour in wine and bring to a boil. Reduce heat and simmer, stirring until no liquid remains, about 5 minutes.
4. Serve warm.
