This oxtail stew is absolutely delicious and pure comfort.


Prep. time:  10 minutes Ready in: 6-7 hours Serves: 6-8


4-5 lb. oxtail cut into pieces

8 slices smoked side bacon cut into 1 inch lengths

2 tbsp. olive oil

1 onion chopped

4 carrots, peeled and chopped

2 stalks of celery, sliced

1 package of sliced mushrooms

1/2 cup red wine

1 1/2 cups beef stock

1 bay leaf

1 tsp. thyme

1 tbsp. parsley

1 tbsp. tomato paste

Salt & Pepper

1 tbsp. flour (optional)

2 tbsp. fresh chopped parsley


In a pan over medium-high heat, brown the bacon and oxtail in olive oil.  Transfer to slow cooker.  Add the onion, carrots, celery, mushrooms, wine, stock, bay leaf, thyme, parsley, tomato paste, salt & pepper.  Stir to combine.  Cook on low for 6-7 hours.  Drain liquid from crockpot and mix with flour to thicken.  Pour over stew and garnish with parsley.

Donna’s Tip:  Add cubed sweet potato about 2 hours before stew is done.
