Lamb (3)


Serve this lamb with mashed or roast potatoes and glazed heirloom carrots.

Serves: 4-6



3 cloves garlic, thinly sliced

1 tbsp. chopped fresh rosemary

1 tsp. grated lemon zest

3-4 lb. boneless lamb roast

1/2 tsp. each salt and pepper

3 tbsp. lemon juice

1 tbsp. liquid honey

6 shallots, quartered

2 tsp. cornstarch



1.  Combine garlic, rosemary, lemon zest, salt and pepper and rub all over lamb.  Place in slow cooker.

2.  Whisk lemon juice with honey, pour over lamb.  Add shallots.  Cover and cook on high for 3 1/2 to 4 hours.

3.  Remove lamb and place on cutting board.  Tent with foil and let stand for 10 minutes before slicing.

4.  Whisk cornstarch with 2 tbsp. water; whisk into slow cooker.  Cover and cook on high until thickened about 10 minutes.

5.  Pour sauce over lamb and serve.
